Our microwave has been on the fritz, so I needed to find another way to make my Dukan oat bran cookies. I found a recipe for a baked version of the cookies on the U.S. Dukan facebook site, and thought I'd try it out.
Below is the recipe:
6 Tbsp oat bran
4 Tbsp sweetener (I used Splenda)
1 teaspoon baking powder
1.5 teaspoon cinnamon
2 teaspoon vanilla yogurt
1 egg white
1/8 tsp vanilla extract
1) Preheat oven to 350 F.
2) Mix all ingredients in a bowl.
3) Spoon out six cookies onto a baking tray.
4) Bake for 10-12 minutes.
The cookies turned out GREAT! I ate two of them straight from the oven, and they were warm, sweet, chewy, and cinnamon-y.
I actually think this version of the oat bran cookie tastes better than the microwave version. However, the microwave version is a lot quicker, and sometimes convenience trumps taste. In my case, though, I think the oven is going to be my new best friend for a while...

ReplyDeleteThanks, Vicki! Just tried your recipe and they are great! Nice change from eating oat bran muffins. I was in a rush, so I didn't measure properly. Did you flatten your dough out? When I first put our cookies in the oven, I left them in a "ball" shape like I do with chocolate chip cookies, but after about 6 minutes in the oven I noticed they weren't melting down so I flattened them with a spoon. They taste great still!

ReplyDeleteHapa Couple: That's so interesting. My batter was actually more on the runny side -- similar to the consistency of thick yogurt. Thus, as soon as I spooned it onto the cookie sheet, it immediately flattened out into the shape of a cookie. I wonder what the difference was in our ingredients?

ReplyDelete...maybe Hapa Couple left the mixture for longer before putting them on the tray, as the Oat Bran can thicken a mixture. Or maybe she used a smaller weight egg, as the smaller ones will have a smaller white...so less liquidy?
Thanks Vicki and mydukandiary for the suggestions..come to think of it, I did use egg whites from the carton and guesstimated how much 1 egg white would be. Will try this again this coming weekend. Thank you!
